About This Project
For diabetes, good glycaemic control prevents complications like heart attacks, strokes, and kidney failure. Cutting down on carbs is very difficult to do, as carbs are addictive. Konjac fibre is a carb alternative, which is used rarely as it is not as easy to cook, but we now have a way to cook it into delicious meals. We hypothesize that konjac fibre meals can significantly reduce glucose levels in diabetics. The hypothesis will be tested on 100 diabetics, who act as their own controls.
