Ever since i qualified as a nutritionist, I have been fascinated by the potential of nutritional therapy to help improve outcomes for patients with lifestyle diseases. Whilst researching traditional diets, I came across a natural fibre called konjac glucomannan, which is part of the staple diet in South East Asia and Japan. Intriguingly, many scientific papers confirm that konjac fibre can help improve glycaemic control, and yet it is virtually unknown in the West. I made it my mission to find out why and to try to do something about it.
