I recommend reading Engelmann's work to see how all kinds of categorization can be taught including hierarchal. The most complete book of his work is Engelmann and Carnine (1982). Theory of instruction: Principles and Applications, New York: Irvington, but an early version of his approach is Engelmann (1969). Conceptual Learning. San Rafael, CA: Dimensions. These books outline the foundations of Direct Instruction, which though it does not always work, is as complete an experimental evidence-base for conceptual learning (including categorization) as exists. All my best in obtaining the funding needed. If the Overview and Abstract had more information on methods I'd be inclined to give more. The devil is always in the details!
